There's nothing like the changing of the leaves to give you a hankering for something warm, sweet and perfectly seasonal.
In case you missed it in the monthly newsletter, here's our satisfying (and healthy!) recipe for harvest apple spice pancakes.
This surprisingly simple breakfast treat comes courtesy of the newest member of the Lyle Sorenson team, executive assistant Krystal Provencher.
Krystal's impressive background in mortgage and law make her a huge asset to our office, and her habit for bringing in delicious baked goods is just the cherry on top!
Krystal's secret for healthy living is to modify recipes with good-for-you substitutions. She strives to trick her family with good-for-you treats that taste nothing like health food.
This cozy breakfast has quickly become a favorite in her house, and once you try it out you'll see why.
With just a touch of spice, a hint of vanilla and almond and the perfect amount of harvest apple, these pancakes are the perfect way to wake up on a chilly autumn morning.
Healthy Harvest Apple Spice Pancakes
Makes 1-2 servings, adapted from a recipe found on fitnessrxwomen.com. Enjoy!
1/3 cup whole wheat flour
1/2 scoop vanilla protein powder
1/4 tsp baking powder
2 tsp brown sugar
1/4 tsp cinammon
1/2 tsp pumpkin pie spice
1/4 cup apple sauce
1/3 cup almond milk (I use vanilla almond milk)
1 whole egg
2 egg whites
1 tbsp Greek yogurt
1 tsp vanilla extract
Whisk together all ingredients, and cook on a skillet or griddle on medium/low temperature (these tend to burn easily, so watch carefully). Flip when you see bubbles, about 2-3 minutes per side. Enjoy with syrup, peanut butter, powdered sugar, or plain!
